I call it semi-homemade for several reasons and you&#8217;ll see why, but everyone I have ever made this for has loved it. I make it quite often during these cold winter months.</p>
<p>Not only does this meal taste great, but it&#8217;s one of those meals that you can clean the kitchen while it is baking. I love doing that and then sitting down to eat with an already clean kitchen. When we are done eating, there are just a few dishes that need to be loaded into the dishwasher. Now that&#8217;s a great feeling!</p>
<p>I found this recipe on the back of the Pillsbury Pie crust years ago and have modified it to fit our taste. The original recipe didn&#8217;t have potatoes in it and to me, you can&#8217;t have Chicken Pot Pie without potatoes! Now, I do not like making pie crust. I just don&#8217;t enjoy it, so I use the Pillsbury already made pie crust and it works for my family.</p>
<p><strong><em>Chicken Pot Pie Recipe:<span id="more-37"></span></em></strong></p>
<p><strong>Ingredients</strong></p>
<p>1 (15 oz) pkg Pillsbury Pie Crust</p>
<p>1/3 cup butter</p>
<p>1/3 cup onion (chopped)</p>
<p>1/3 cup flour</p>
<p>1/2 tsp salt</p>
<p>1/4 tsp pepper</p>
<p>1 1/2 cups chicken broth</p>
<p>1/2 cup cooked potatoes</p>
<p>2/3 cups milk</p>
<p>2 1/2 &#8211; 3 cups cooked chicken</p>
<p>2 cups frozen mixed vegetables, thawed</p>
<p><strong>Directions</strong></p>
<p>1. Preheat oven to 425 degrees F. Prepare crusts according to package directions for 9 inch pie.</p>
<p>2. In medium sauce pan, melt butter over medium heat. Add onion, cook for 2 minutes until tender. Stir in flour, salt, pepper until well blended. Gradually stir in broth and milk. Cook, stirring constantly until thick and bubbly.</p>
<p>3. Add chicken, mixed vegetables and potatoes. Remove from heat. Spoon into pie pan.</p>
<p>4. Top with 2nd crusts and flute the edges. Cut 4 slits on top of the crust.</p>
<p>5. Bake for 30-40 minutes until the crusts is a golden brown. Let stand for 5 minutes.</p>
<p>Tips:</p>
<p>* Cook the chicken and potatoes at the same time. While those are cooking, thaw your vegetables in water.</p>
<p>* If your Chicken Pot Pie seems very runny, that means you need to cook the broth longer next time. It took me a few tries to get the broth exactly where I liked it.</p>
<p>* One chicken pot pie feeds our family of 5. This is actually an easy meal to serve to guests. Preparing 2 pies at the same time isn&#8217;t difficult and your guests will love it!</p>
<p>* Chicken Pot Pie is excellent leftover!</p>
