My Favorite Chicken Pot Pie Recipe

chicken-pot-pieThere are several meals that I cook for my family that they request over and over again and my semi-homemade Chicken Pot Pie is one of them. I call it semi-homemade for several reasons and you’ll see why, but everyone I have ever made this for has loved it. I make it quite often during these cold winter months.

Not only does this meal taste great, but it’s one of those meals that you can clean the kitchen while it is baking. I love doing that and then sitting down to eat with an already clean kitchen. When we are done eating, there are just a few dishes that need to be loaded into the dishwasher. Now that’s a great feeling!

I found this recipe on the back of the Pillsbury Pie crust years ago and have modified it to fit our taste. The original recipe didn’t have potatoes in it and to me, you can’t have Chicken Pot Pie without potatoes! Now, I do not like making pie crust. I just don’t enjoy it, so I use the Pillsbury already made pie crust and it works for my family.

Chicken Pot Pie Recipe:

Ingredients

1 (15 oz) pkg Pillsbury Pie Crust

1/3 cup butter

1/3 cup onion (chopped)

1/3 cup flour

1/2 tsp salt

1/4 tsp pepper

1 1/2 cups chicken broth

1/2 cup cooked potatoes

2/3 cups milk

2 1/2 – 3 cups cooked chicken

2 cups frozen mixed vegetables, thawed

Directions

1. Preheat oven to 425 degrees F. Prepare crusts according to package directions for 9 inch pie.

2. In medium sauce pan, melt butter over medium heat. Add onion, cook for 2 minutes until tender. Stir in flour, salt, pepper until well blended. Gradually stir in broth and milk. Cook, stirring constantly until thick and bubbly.

3. Add chicken, mixed vegetables and potatoes. Remove from heat. Spoon into pie pan.

4. Top with 2nd crusts and flute the edges. Cut 4 slits on top of the crust.

5. Bake for 30-40 minutes until the crusts is a golden brown. Let stand for 5 minutes.

Tips:

* Cook the chicken and potatoes at the same time. While those are cooking, thaw your vegetables in water.

* If your Chicken Pot Pie seems very runny, that means you need to cook the broth longer next time. It took me a few tries to get the broth exactly where I liked it.

* One chicken pot pie feeds our family of 5. This is actually an easy meal to serve to guests. Preparing 2 pies at the same time isn’t difficult and your guests will love it!

* Chicken Pot Pie is excellent leftover!
